Kale Blueberry Chia Smoothie
I have long professed my love for this smoothie. It’s part of my daily routine and helps me feel good all day. I’ve never been one to gravitate towards coffee or energy drinks (though I’ll do a decaf latte once in awhile, I’ve never really consumed either and the latter never). I know, love, and believe in this smoothie and over time, I’ve added a smorgasbord of healthy bits to mutate it to the ultimate powerhouse concoction. Today, I bring to you the chia seed version.
Why chia seeds?
Chia means strength. The body can process intact seeds and won’t go rancid and because of it’s high fiber content (11 grams in 1 oz), it helps you feel fuller for longer, (it also doesn’t hurt that when it gets wet, it swells up and has a gel-like hydrophilic quality that can expand in the stomach). This property also aids in digestion and contributes to a low glycemic index. This gel can also be substituted for eggs in baked goods (1 tb=1 egg), how cool is that? It’s also rich in omega-3 fatty acids (5 grams in 1 oz) as well as 18% of your daily recommended intake of calcium and 10% of protein.

- 1-2 c kale {or beet tops, swiss chard, collards, etc}
- ½ c wild blueberries, dark cherries, açaí
- 1-2 frozen bananas
- 1 tb chia seeds*
- 1-2 c unsweetened nut milk
- Tip everything into a blender and mix.

I do enjoy chia but never sure what to put it in. Smoothies are the easiest. So happy to hear about the egg substitute, that is great.

I love chia seeds too and not just for the health reasons (which are pretty persuasive). I love the texture!
I have chia seeds but hardly ever use them! This sounds really good! I also want to try making a non-cook fruit jam with them. I did make some pudding with them and that was good too. I once bought some kombucha with white chia seeds in it (was so pretty–they stayed suspended b/c of that gelatinous quality) and it was so good!

You know, I love, <3 , LOVE this recipe. Did I tell you I burnt out my old blender when I started making these? Thankfully my Aunt got me a Ninja as a replacement. ^^)
I guess it's time for me to look into Chai seeds. I had been using ground flax as a substitute for eggs, but I did not know you could use Chia seeds too.
My dad introduced me to wheat germ when I was a young'un. He used to sprinkle it on our cereal in the mornings. I keep a mixture of wheat germ and flax meal to add to most of my dishes; not only is it good for you, it helps to thicken things up a bit.

I don’t know what blanket I’ve been sleeping under but, I think it is high time I start learning more about Chia. I knew that chia was a good source of omega-3 but I had no idea you could substitute it for eggs. The possibilities must be endless!
