Serves: 4-6 Mini Pies
Ingredients
- ¾ c fresh lemon (or lime) juice + the citrus zest
- ¾ c sugar
- 3 eggs
- ½ stick unsalted butter
- Prepared pie shells
- Whipped cream
Instructions
- Stick everything in a microwave safe bowl and heat in 30 second intervals, whisking constantly. In about 4-6 minutes, it should be nice and thick. Strain through a fine mesh sieve.
- Pour into pie shells and refrigerate to cool/set.

your recipe is excellent but i had 2 improvise. i only had 2eggs, 1cup lemonjuice cncentrate, 1/2stckbutter, 1cupsugar + some cornstarch. i used stove becuz my microwave wasn’t working right….so now i have delicious lemon meringue pie filling! 8)

One question..I like to make it in one big pie and it’s a little shy so I put whipped cream on top…but if I wanted it filled to the top, do you think doubling it would be too much??I suppose I could just save the rest…freeze it maybe or put it in the small shells…I guess I answered my own question LOL
