Pumpkin Cheesecake Truffles
These taste like little bites of Heaven. Being a delicious and decadent cross between a chocolate truffle and a pumpkin cheesecake, the best part about these are that they’re completely no bake.

Pumpkin Cheesecake Truffles

Serves: 1-2 Dozen
Ingredients
- ¼ c drained pumpkin puree
- 1 c crushed gingersnaps
- 4 oz room temperature cream cheese
- ½ ts pumpkin spice
- ¼ c sugar
- 16 oz melted white chocolate
Instructions
- In a food processor, blend everything together {except the chocolate}
- Chill the mixture overnight.
- Scoop into balls.
- Melt chocolate and dip the balls and set over wax/parchment.
- Sprinkle with cookie crumbs if desired. Allow to set and serve.
Notes
Does not include chilling time.

OMG Squishy! This year I am making miniature desserts for our family dinner. We always have way too much dessert, and I thought the best solution was to make smaller versions. So I’m making pecan tassies (hello, can you say SOUTHERN!) to replace the pecan pies, and I wanted to make pumpkin cheesecake, but I couldn’t figure out how to cook the smaller cheesecakes in mini-muffin pans… (water bath or not; temp, etc.) and TA DA!I get up this morning and here’s you pumpkin cheesecake truffles! yeah, my Thanksgiving dessert selection is now complete! and they’re gonna love this! could I make these the night before and refrigerate them? and bring them to room-ish temp before serving? hmmm…. thank you for the recipe, what timing!
Yikes, note to self “read the recipe all the way through first” sorry, I just did that and NOW I see that I can make the cheesecake the night before and THEN coat them before serving. I love this….

Hey squishy what would you recommend as another spice substituting pumpkin spice in these truffles if any?
You could always use just cinnamon or a combo of cinnamon and nutmeg =)
