Red Velvet Cheesecake
Red velvet can’t live without cream cheese frosting, so it only seemed natural to put them together in a “til death do you part” kind of way. No need for Kanye West to rally for a prenup here, it’s a match made in Heaven, if I do say so myself.

Red Velvet Cheesecake

Serves: One 8″ Cheesecake
Ingredients
- 2 blocks (8 oz) soft room temperature cream cheese
- 1 c sugar
- 1 ts pure vanilla
- ¼ c sour cream or buttermilk
- 2 room temperature eggs
- 2 tb sifted unsweetened cocoa
- 1 ts vinegar
- 2 tb red color
Crust
- 1 c crushed cookies/crackers
- 6 tb melted butter
Instructions
- Make sure your cream cheese is very soft and break it apart with your mixer. Blend together with your sugar and vanilla for about 5 minutes until light and fluffy.
- Tip in your cream/milk and slowly crack in one egg at a time. Blend well.
- Sift your cocoa and sprinkle it in.
- Pour in your vinegar and color. Blend well. Make sure not to over beat to prevent incorporating too much air.
- For the crust, press together your crumbs and butter onto the bottom of an 8″ spring form pan. Bake at 350 for 6-8 minutes. Cool completely and pour in your filling.
- Wrap your pan in foil and place it in a larger dish/pan. Fill with hot water and allow it to reach half way up its side.
- Bake your cheesecake at 350 for 1 hour to 1 hour and 15 minutes. Allow it to cool for at least a couple hours before setting in the fridge overnight.

I like the way you “squish” Angie! You are so clever. I love this idea, even if I am anti-food coloring (I do make concessions for red velvet despite the aversion b/c it is one of my most requested cakes). Where’s the info on the natural dyes? Love your nails, BTW, did you plan them to match the cheesecake?

I really don’t get the red velvet rage, but if I were to eat something with red food colouring, it would be THIS cheese cake. I guess you can make it without the colouring but then it wouldn’t be red. I seen some recipes using beets as the colouring but I wonder if the taste would be off putting.

Made me smile =) I make a vegan red velvet cake for my friends sometimes and I’ve used beets to impart a bit of blush and they swear they can’t taste it (but I can) so I guess it’s a toss up…you could always go a step below and not aim to make it so red as to use less beet juice, I suppose. The natural tints are great but so damn expensive :/

if I want to use 4in springform pans can you tell me what the temp and time would be? I live alone and would like to divide recipe between to pans so I can give half away. Less for me is a good thing.
Hi, Terry! I didn’t recipe test this for a 4″ so it’s difficult to say with absolute accuracy but begin at the half way mark in time {same temp} and go from there.
