Roasted Pumpkin Seeds {Extra Crispy}
As promised, today I bring to you a recipe for those pumpkin seeds. Never to be destined for the compost again, there’s a sure fire way to light, crispy {and easily digestible} roasted pumpkin seeds.

Roasted Pumpkin Seeds {Extra Crispy}

Serves: 2 Servings
Ingredients
- Seeds from 1 *sugar* pumpkin
- 1 tb melted butter
- 3 tb + 1 ts pumpkin spice
Instructions
- Clean/wash the seeds.
- Boil in salted water for 10 minutes.
- Dry thoroughly {the drier = the crispier}
- Spread evenly on a baking sheet and toss with melted butter/spices.
- Bake at 350 for 15-20 minutes, stirring in between.
The flavor possibilities are endless! Sriracha/honey, garlic parm, curry, cayenne, maple…

I would love to try this recipe, it seems so easy but unfortunately the local pumpkin seed nearby my place is preety tiny and i think i’s not preety good to be roasted…
I never knew that boiling them in salted water first makes them crispy! Cool! I once made some with taco seasoning and labeled them as “scabs” on our Halloween table.
