Sweet Potato Cupcakes
If just on this blog, I’ve expressed my affinity for pumpkin {everything} similarly, I’m equally in love with all the flavors that Autumn has to offer. Sure, the sweet potato rolls around year long, but it’s during this time of year that it really shines–in the lights, camera, action kind of way.

Author: The Squishy Monster
Serves: 1 Dozen
Ingredients
- 2 c unbleached Flour
- 2 ts Baking Soda
- 2 ts Cinnamon
- 1 ts fresh Nutmeg
- 1 ts fine Salt
- 2 c Sugar
- 1 c Canola Oil
- 4 room temperature Eggs
- 2 c Sweet Potato Puree*
- 1 ts pure Vanilla Extract
Filling
- 8 oz softened Mascarpone Cheese
- 4 oz Sweet Potato Puree
- 1 ts Cinnamon
- 1 ts ground Ginger
- ½ ts freshly ground Nutmeg
- ½ ts ground Allspice
- ½ ts ground Cloves
- 1 ts pure Vanilla Extract
- Pure Maple Syrup
Topping
- Marshmallows
Instructions
- In your first bowl, weigh and sift out your dry ingredients which include your flour, baking soda, cinnamon, nutmeg and salt.
- In your second bowl, cream together your sugar and oil. Beat in your eggs one by one.
- Spoon in your sweet potato and splash in your vanilla. Beat the mixture in your second bowl until it gets foamy.
- Now, slowly combine your first and second bowl, being careful not to over mix.
- Bake at 350 for 17-19 minutes.
- Cool and meanwhile assemble your filling.
- Cream together your mascarpone and sweet potatoes with your vanilla. Squeeze in as much maple syrup to sweeten to your liking. Chill your filling in the fridge for 15 minutes or so.
- Fill a pastry bag, fitted with a small round tip and fill your cooled cupcakes until you feel gentle pressure {you don’t want to burst your cake}.
- Place a Marshmallow on top of each cake and hit it with the broiler–keep your eye on it, you just want to begin to caramelize the sugar. When it becomes golden and puffs up, gently take a spatula and press it down.
Notes
*To make the puree, roast cubes of sweet potatoes at 350 for at least 30 minutes (or until fork tender). Cool completely and blitz in a food processor. Add water as needed to make a thick and creamy consistency. You can also use a store bought can.
Sweet Potato Kisses for you…and you!
Love,

That is so awesome of you, Les! You know that helping the less fortunate is something that is near and dear to me and I’m so proud of you! What an amazing cause and way to spend your weekend—goooo Les!!
I LOVE sweet potatoes, even more than pumpkin I think and these cupcakes just seem like my absolute Achilles heel! And the marshmallows? Nice one

Sweet potato cupcakes; sounds like something you’d hear a southern exclaim in delight. You know us southerns like our ‘sayings’. I can’t wait to try these out and the icing on the cake (literally ~.^) is the marshmallow topping. <3 it!! I bet you could do a s'mores recipe utilizing the marshmallow icing. My youngest son just loves anything s'mores.
Thanks for sharing Angie!! I hope you're having a GREAT weekend!!

Sweet potato > pumpkin
This looks SO good! And I love your video! I only recently discovered the trick of using a marshmallow as a cupcake topping… so easy and delicious!

I’ve never tried a sweet potato dessert before but this looks very delicious!

mmmm….yummy cupcakes you have there! sweet potatoes are very easily available as compared to pumpkin, as I just love the creamy filling in it.

You’re speaking my language! I got pretty excited by the marshmallow frosting, especially since it’s NOT used as a fat-free alternative for frosting (you made up for that with the filling-haha) but because it’s reminicient of sweet potato casserole which is popular this time of year. I love your creations, Angela! I’m so saving this.
Well, hello, beautiful cupcakes! I quite enjoy my pumpkin, so when we get a big one, I can divvy it up into so many things – muffins, breads, cupcakes, stews, roast, etc.
Not sure if I’d like these. I’ve always associated yams with savory not sweet.
I’m not a huge fan of sweet potatoes but I must say, these cupcakes look delicious!
These sound gorgeous, I do like squash in pretty much any form, but your cupcakes sound particularly good. If you’d just added a bit of chocolate, these would have been perfect for this month’s We Should Cocoa, which is all about pumpkin.
Sorry, just reread the post and must have been having a very silly moment as I read pumpkin for sweet potato – sounds even better now!
These look great! I once made a sweet potato cupcake topped with toasted marshmallow, but I like your addition of the mascarpone filling. And I like that you include a video!
Thanks, Shirley…I hope your weekend went well!!
=)
I will have to check that out!
Thanks! I hope your weekend was great!
Have you ever tried candied yams? These are a nod to those…and sweet potato pie, of course ^.^
You and I are on the same wave length ^.^
lol, but of course! Thanks, Veronica…I was so happy to read about your smoothie progression….yaaay for new gifts =)
Right? All this time spent creaming butter and sugar, lol.
ftw!! ^.^
lol, love the video…check out my s’mores or rainbow cupcakes when you get the chance ^.^
A sweet potato cupcake sounds so scrumptious! Filling them just sends them over the top for me – love the marshmallow frosting too!
I love using vegetables in baking
Wish I could find some quality sweet potatoes at this time of year…they ain’t a regular produce over here.
The cupcakes look awesome!
Seriously creative right here! Love sweet potato – these looks so moist!
Love this recipe! I am definitely going to have to make it for thanksgiving this year! xo
mmmmmmmm! this sounds delicious. i’m just coming around to sweet potato, so this would be a good one to try, maybe for my upcoming friends halloween party

Hi angie!
Its nice to meet you, just hopped over from charles’s blog. =)
I think so the sweet potato season is coming up here soon, not sure though.
That’s a brilliant idea with the cupcakes, they looks so appetizing too and I bet they are addictive.
I wish u a great week!
Thanks, Reeni–I hope you had a great weekend!
I wish Autumn would stick around a bit longer…
I hope you get to try it—there’s a wealth of goodies that sweet potatoes bring including but not limited to sweet potato pie, sweet potato butter, candied sweet potatoes/yams, sweet potato casserole, sweet potato souffle, sweet potato loaf, carrot/sweet potato soup…
totally want to make these!!!! yum!!!! xO!

I love my occasional dose of sweet tates and pumpkin cupcakes. Those look so delicious!
Oh, how good Autumn is to us!
Wow, these cupcakes sound so good! Here in Italy we don’t use sweet potatoes, but I love them and never tried them in any kind of cake or sweet. Thanks for this recipe: I’m going to try it!
I suppose it is a southern thing…took me awhile for that to settle in, lol. The south is so engrained in me that sometimes, I forget the entire word doesn’t live off of sweet tea & fried pickles like me =)
Charles is great! I hope you have a wonderful week too, Helene!!!
I hope you do—Corgis love it too (don’t quote me on that, lol) ^.^
Sooo moist–I hope you get to try it!
That makes me sad…I hope that when you do get your hands on some, you will freeze the puree and are able to enjoy it year round!
I’m always momentarily forgetting that the beloved pumpkin and sweet potatoes are veggies…I shared my cupcakes with my nephew who’s practically the CEO of the veggie-haters club and he LOVED it. I told him it was spice cake and he was none the wiser muahahaha!
These cupcakes look awesome especially with the marshmallows. Yummy!
YAAAY!!
Great idea, I’ve never even thought about whipping my sweet potatoes into cupcakes
The idea of sweet potato cupcakes is genius! Love this
Love the idea of pumpkin cupcakes! This is genius
Thanks, Asmita!
Thank you Angie. Karren Dylewsky and Commissioner Cris Harris got it going and came up with the idea. There is a VA ( HINES) in the next town actually Hines Il and a VA hospital, so I have seen first hand the price men and women pay with their bodies and lives serving our country. If not for my vision and heart issues I would have volunteered for service in my youth.Below is a scene from a ceremont at HINES VA HOSPITAL a few years ago.

Thank you for visiting with me =)
I’m going to attempt to sneak in marshmallows more somehow ^.^
Thank you =)
WOW! I just notice the rest of my comment did not post.
Angie your cup cakes look so lovely and delicious!
Thanks for sharing!!
Thanks, Les. That’s strange. I hope it doesn’t happen often.
Hi! I was wondering how many this recipe yields. Also, if I double it, do I need to change anything?
Thanks
Hi, Maria! It yields about a dozen. I’ve multiplied this recipe several times without any problems too. Happy baking!!
