Fluffy Cinnamon Sticks
I love cinnamon rolls as much as the next person {heck, I even made them into cookies!} but let’s face it, it’s a bit of an arduous task that isn’t feasible for most mornings. When I have time to luxuriate in the kitchen on a lazy Sunday morning and I’ve just rolled out of bed still clad in jammies, I don’t mind sinking myself into plush dough and cradling it from one step to the next. Realistically, most mornings are just too much of a blur to even consider that so I’ll grab my go-to smoothie on the run. Other times provide a sweet spot where mornings aren’t so quite rushed and you have a few moments to linger a bit longer over coffee and savor your morning ritual. Those mornings definitely call for these fluffy cinnamon sticks.
These mighty fine cinnamon sticks are an ode to my cinnamon rolls. You’re familiar with those sweet buns, I’m sure. The tender layers of sweet bread conspiring with gooey frosting dripping into sweetly spiced crevices? Oh, they get me every time. However, these cinnamon sticks are the best of both worlds and best of all, they come up in a relative flash. Freshly baked smells beckon you to come over and enjoy them with the option of rolling the chubby breadsticks into the shimmering dust of cinnamon sugar that then get drizzled {or dunked} with a 2 ingredient icing/sauce. How about that for weekday magic to start off your day?
The base of these are quite simple calling for 5 basic ingredients. You can bind them by hand or with a mixer but for me, there’s something so wonderful about the close contact with a shaggy dough that seems like will never come together but it always does. 10 minutes into working with the dough, you see and feel that what was once a mess is organizing itself into a neat plump little ball. There’s an almost therapeutic quality about it. The next step will be the most complicated. You have to cover the bowl with a cloth and allow it to rest. 30 minutes later, you’ll see that your baby ball has now swelled in its bowl. This is when I like to take my hand and press it into it…another very satisfactory part of the process. The surface feels smooth, almost warm and the pliable nature of the dough is now workable as it no longer sticks to everything. This is the point where you can shape them how you’d like. After they’ve baked, you brush them with butter, toss the glossy pieces with cinnamon sugar and set it all off with icing and you’ve just made yourself homemade cinnamon sticks that are soft, warm and completely irresistible.
- 1¼ c unbleached flour
- ¼ ts fine salt
- 1 tb sugar
- 1½ ts intant yeast
- ½ c warm water {mine was at 110 degrees}
- 2 tb melted butter
- Cinnamon sugar: 2 tb sugar + 2 ts cinnamon
- Icing: 1 c powdered sugar + 1.5 tb whole milk
- In a medium bowl, whisk the flour, salt and sugar together.
- Add the yeast and water. If your water is too hot, it will kill the yeast.
- Mix with a mixer or by hand. If mixing by hand, the dough is ready when it sticks to itself and becomes smooth and supple {or about 15 minutes later}. You may use 2-3 tb of extra flour if it’s too sticky but no more.
- Set a kitchen towel over the bowl and allow the dough to rest in a dark place undisturbed for 30 minutes.
- After resting, tear off pieces of the dough and shape into desired forms. Bake on parchment/silpat at 450 for 6-8 minutes.
- Brush with melted butter and toss in cinnamon sugar.
- For the icing, whisk the powdered sugar and milk together. Add vanilla if desired.

My goodness, your Fluffy Cinnamon Sticks look heavenly:) I especially like the idea of dipping and dunking, lol…I would never find myself baking these fluffs of goodness but that doesn’t mean I wouldn’t be dreaming about them.

First of all let me tell you that your cinnamon sticks look delicious! I’ve followed your recipe and instructions but unfortunately mine came out not fluffy and a bit hard like biscuits, how can I solve this issue?
Hi, Monica! Let’s troubleshoot. Is your yeast fresh? Did the dough rise/double in size? Here are a few tips: I always strive to slightly underbake rather than overbake {especially if you’re re-heating to serve later} I also always strive to create a slighter tackier or wet dough. Lastly, you can always add in a bit more yeast {I use instant yeast, what kind did you use?} and increase the rise time, making sure your dough is covered so that it doesn’t dry out and puffs up in a warm {not hot} place to proof.
I made these and they’re delicious! They taste so good my whole family couldn’t get enough. We had to make two more batches. It’s also the simplest recipe I’ve come across, it doesn’t take much time either.
